BRITT'S DILL CURED SALMON
Salmon Dill Recipe INGREDIENTS
3 to 4 lbs. cut of salmon
Dill twigs
2/3 c. salt
1/2 c. sugar
20 white peppercorns, squashed
Touch of saltpeter, discretionary (accessible in pharmacy)
DRESSING:
3 tbsp. olive or salad oil
1 1/2 tsp. vinegar
1/2 tsp. French mustard
1/4 tsp. salt
Run of white pepper

Salmon Dill Recipe INSTRUCTIONS
Select center slice of 6 to 7 lb. salmon. Eliminate bone and cut into two pieces longwise. Wash and dry on retentive paper. Blend salt, sugar and pepper and (to hold red shade of salmon), touch of saltpeter. Rub part of preparing into fish. Place thick layer of dill twigs in lower part of container or bowl.
Place one piece of salmon, skin side down, in dish and sprinkle with outstanding flavors and cover with a lot of dill branches. Put other piece of fish on top, skin side up. Cover with board and put weight on top. Keep in fridge 16 to 24 hours. Eliminate flavors and cut salmon into cuts. Orchestrate on platter and embellishment with dill branches and lemon cuts. Shake together all elements for dressing and let stand 5 minutes prior to serving. Serve salmon dill with dressing, buttered spinach and bubbled potatoes, or as an appetizer...nice ! Appreciate it !
